Tortelloni con "nduja"

Tortelloni filled with ricotta and something to reflect the spicy, smoky and umami flavours in a Calabrese ‘Nduja (en-DOO-ya). This one is a vegetarian paste made with sundried tomatoes, olives, smoked paprika and a few other spices unique to ‘nduja to give you all the flavors with none of the meat!
