Sugo alla norma

Classic southern Italian pasta sauce from Catania, Sicily. Contains onion, garlic, paprika, lots of basil, EVOO, San Marzanos as well as local tomatoes and eggplant. Great with our rigatoni, toss with this and finish off with some crumbly cheese like feta (instead of ricotta salata), or even bake it in the oven with some mozzarella!
